Another option…we’ve been making corned beef from scratch the last couple years and it is easy to do. It just takes a little pre-planning, as the meat needs to be in the brine for 7-10 days before cooking. Plus, we can then use a leaner cut of beef that makes into a nice, lean corned beef. While there are many brine recipes on the Internet, I am happy to share the one we like to use here at East Cape RV for our St. Patrick’s Day dinner, if anyone would like to have it.
